Ingredients
- 1/4 cup red quinoa
- 1/2 cup water
- 1/4 teaspoon Kosher salt
- 1 1/2 cups chopped, peeled butternut squash (3/4" chunks)
- 1 teaspoon extra virgin olive oil
- 8 grape tomatoes, halved lengthwise
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh basil (loosely packed)
