Peruvian Quinoa Lettuce Roll ups
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 cup diced red bell pepper
- 1 small chile, minced
- 1 cup diced potato (purple, if you can find them, or Yukon gold)
- 1-1/2 cups diced calabaza or butternut squash
- 3/4 cup diced tomato
- 1 teaspoon garlic powder
- 1-1/2 teaspoons kosher salt
- 1/4 cup minced cilantro
- 12 large romaine lettuce leaves
- 1 avocado, diced
