  • 1/2 cup carrot, roughly chopped
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large portabella mushroom, roughly chopped
  • 1 cup uncooked quinoa
  • 2 cups water
  • 2 tablespoons fresh flat-leaf parsley
  • 1 teaspoon fresh thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces cheddar or Monterey Jack cheese, shredded
