  • Dressing:
  • 1 small clove: garlic, finely minced
  • 1 tablespoon rice vinegar
  • 3 tablespoons buttermilk or plain yogurt
  • Salt and freshly ground black pepper
  • 1/4 teaspoon sugar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon vegetable oil
  • Salad:
  • 1 head red or regular butter lettuce, thick ribs removed and leaves torn into pieces
  • 1 bunch watercress, stems removed
  • 10 fresh water chestnuts, peeled and thinly sliced
  • 4 green onions, thinly sliced, including 1/2 of dark green parts
