- Salt and freshly ground black pepper
- 1/4 teaspoon sugar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon vegetable oil
- Salad:
- 1 head red or regular butter lettuce, thick ribs removed and leaves torn into pieces
- 1 bunch watercress, stems removed
- 10 fresh water chestnuts, peeled and thinly sliced
- 4 green onions, thinly sliced, including 1/2 of dark green parts
