- 4 red peppers tops removed, seeds and veins removed and discarded
- 1 large eggplant
- 2 tbsp. olive oil
- 1 medium onion finely diced
- 2 cloves garlic crushed
- 1 8 oz can tomato puree
- 1 cup vegetable stock
- 4 tbsp. fresh basil finely chopped
- Salt and pepper to taste
- 1 vegetarian mozzarella ball light or reduced fat, thinly sliced
- ¼ cup grated Parmesan cheese
