Ingredients
- For the honey-orange sauce:
- 1 1/2 cups fresh orange juice
- 1/2 cup honey
- 1 tablespoon sambal oelek
- 1 teaspoon soy sauce
- 1 clove garlic, grated on a microplane or put through a garlic press
- 1/4 teaspoon salt
- For the skewers:
- 1 1/4 cups honey-orange sauce, divided (recipe above)
- 1 cup mayonnaise
- 1/4 cup vegetable oil
- 4 boneless, skinless chicken breast halves (6 to 8 ounces each)
- 4 metal or wood skewers (soak wood skewers in water for at least 30 minutes)
- Sambal oelek, to taste (optional)
