  • Avocado & Tofu:
  • 8 ounces extra-firm tofu
  • 2 avocados, about 6-8 ounces each
  • Rice vinegar or lemon juice
  • The Vinaigrette:
  • 1/4 cup rice vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Asian fish sauce
  • 1/4 teaspoon finely grated peeled ginger, or to taste
  • 1/4 teaspoon minced garlic
  • 3 tablespoons olive oil
  • 1/2 teaspoon toasted sesame oil
  • Kosher salt and freshly ground pepper to taste
  • Pinch of sugar, as needed
  • Dash of hot sauce (optional)
  • The Salad:
  • 1 small head butter lettuce
  • 1/4- 1/2 cup slivered almonds, toasted
  • 1 tablespoon chopped herb like chives, or an herb mixture using chives, dill, parsley, basil or cilantro
