Ingredients
- Avocado & Tofu:
- 8 ounces extra-firm tofu
- 2 avocados, about 6-8 ounces each
- Rice vinegar or lemon juice
- The Vinaigrette:
- 1/4 cup rice vinegar
- 2 tablespoons lemon juice
- 1 teaspoon Asian fish sauce
- 1/4 teaspoon finely grated peeled ginger, or to taste
- 1/4 teaspoon minced garlic
- 3 tablespoons olive oil
- 1/2 teaspoon toasted sesame oil
- Kosher salt and freshly ground pepper to taste
- Pinch of sugar, as needed
- Dash of hot sauce (optional)
- The Salad:
- 1 small head butter lettuce
- 1/4- 1/2 cup slivered almonds, toasted
- 1 tablespoon chopped herb like chives, or an herb mixture using chives, dill, parsley, basil or cilantro
