Ingredients
- 1 small sweet potato, cut into wedges
- 2 tbsp oil
- 1 garlic clove, chopped
- 1small red onion, finely chopped
- 1 skinless chicken breast, sliced into strips
- 1 tbsp cider vinegar
- 1 tsp honey
- 400g can black beans, drained and rinsed
- 250g pouch Mexican-style rice
- 1 medium tomato, chopped
- 1 lime, zested and juiced
- handful coriander leaves, chopped
- 1 avocado, stoned and sliced
- 1 small tortilla, sliced into strips and grilled until crisp
- hot sauce and lime wedges, to serve (optional)
