Quesadillas Blancas Con Salsa Verde
Ingredients
- 10 tomatillos, husks removed, tomatillos halved
- 1 or 2 serrano chilies, stems removed
- 1 clove garlic, crushed
- salt, to taste
- 2 tablespoons vegetable oil
- 1 small white onion, sliced into thin half moons
- 2 poblano peppers, charred, skinned, stemmed, seeded, and then cut into thin strips
- 4 white corn tortillas
- 3/4 cup Asadero or Chihuahua cheese (use Jack if you can't find Mexican cheese)
