Ingredients
- Make the polenta!
- 2 cups whole milk
- 2 cups water
- 1 teaspoon kosher salt
- 1 cup polenta
- For the layers!
- 1 small zucchini, finely grated (skin and all)
- 1 handful white onion, minced
- 1 handful red bell pepper, minced
- 1 small tomato, minced
- 1 teaspoon hot green pepper like serrano, minced
- 1/2 a lime, for the juice
- 1/2 cup white onion, diced quite small
- 1 can of Amy's Organic Refried Black Beans
- 2 to 3 ounces Monterey Jack Cheese, in large shavings
- 1/2 avocado
- 1 ounce Mexican Crema (or creme fraiche or sour cream if you must)
- 3 tablespoons butter
- salt and pepper (to taste)
