- * 1/2 cup yogurt
- * salt to taste
- * 1 kg chicken (with bone) or mutton,
- biryani masala powder
- * 4-5 clove
- * 1 cinnamon stick
- * 3-4 cardamom pod
- * 3/4 tsp black cumin seed (sha jeera)
- * 12 black peppercorn
- rice:
- * 4 cup basmati rice
- * 4 clove
- * 3 cardamom pod
- * 2 bay leaf
- * 1 star anise
- * 2 tsp oil
- caramelized onion:
- * 1 tbsp ghee
- * 1 tbsp oil
- * 2 large onion, finely sliced
- * 1/4 tsp sugar
- hyderabadi biryani:
- * a pinch of saffron, soaked in 1/2 cup lukewarm milk
- * 3 tbsp oil
- * 1 tbsp ghee plus 2 tsp ghee
- * a handful of coriander leaf
- * extra coriander or mint leaf, to garnish
- * raita, to serve
- * mirch ki salan, to serve (optional)
- * pappadum, to serve
