Summertime Corn Risotto
Ingredients
- 3 tablespoons butter
- 1 medium onion, minced
- 1/2 teaspoon or so kosher salt
- 1/2 teaspoon or so freshly ground black pepper
- 1 large garlic clove, minced
- 1 cup (generous) Italian Arborio rice
- 1/4 cup dry white wine
- 4 cups (max) chicken stock, preferably homemade
- 1 1/2 cups fresh corn kernels
- 1/4 cup scallions, green parts only, chopped, plus a few extra for garnish
- 2 tablespoons fresh basil, chopped
- 3/4 cup freshly grated Parmesan Cheese, plus a little extra for garnish
