Ingredients
- 3 lbs beef chuck cut into 2.5 inch cubes
- 1 bottle red wine
- 1 lb small brown mushrooms quartered
- 7 oz lardons or chopped bacon
- 1 large yellow onion sliced
- 2 medium carrots peeled and sliced, 1/2 inch
- 8 cloves garlic smashed and coarsely chopped
- 2 tbsp flour
- 1 cup pearl onions
- 2 cups beef stock
- 1 tbsp Better than Bouillon Beef (or 1 cube beef bouillon)
- 2 tbsp tomato paste
- 4 bay leaves
- 2 sprigs thyme
- 1 tbsp parsley flakes
- salt and black pepper to taste
- 2 tbsp olive oil
