Ingredients
- 225g - 8oz dried haricot beans, soaked overnight
- 2 medium onions
- 1 bay leaf
- 1.4 litres - 2 1/2pints cold water
- 550g - 1 1/4 lb large potatoes, peeled and cut into 1cm - 1/2inch slices
- Salt and freshly ground pepper
- 5 tsp olive oil
- 1 large garlic clove, peeled and crushed
- 2 leeks, trimmed and sliced
- 200g can chopped tomatoes
- 1 tsp dark muscovado sugar
- 1 tbsp freshly chopped thyme
- 2 tbsp freshly chopped parsley
- 3 courgettes(zucchini), trimmed and sliced
- *for the topping:
- 50g - 2oz fresh white breadcrumbs
- 25g - 1oz cheddar cheese, finely grated
