Ingredients
- 1 tbsp olive oil
- 1 lb turkey Italian sausage, casing removed
- 1 1/2 cups chicken broth
- 1 onion, diced
- 3 carrots, diced
- 3 parsnips, diced
- 1 tomato, chopped
- 3 (15 oz) cans white beans (cannelloni beans), drained
- 5 sprigs fresh thyme or 1 tsp dried thyme
- 1/2 tsp salt - taste throughout the recipe, I ended up adding a bit more
- 1/8 tsp pepper
- 3 cloves garlic, minced
- 1 cup bread crumbs (use gluten free bread if needed and give it a whirl in the food processor to break it down)
- 1/4 cup fresh parsley, chopped
- 2 tbsp butter, melted (or oil if needed for dairy free)
