Ingredients
- 1 flour tortilla
- 1 tbsp. Mayonnaise (optional)
- 2 or 3 big lettuce leaves
- 3/4 c. chopped cooked chicken
- 1 c. diced peaches (If fresh peaches aren’t in season, use frozen ones. 11⁄2 cups of frozen peaches becomes 1 cup when thawed and diced.)
- 1/4 c. diced purple onion
- 3/4 tsp. minced chili pepper (optional)
- 1/2 tsp. salt
- 1 tsp. white vinegar
- 1/4 tsp. garlic powder
