Double Caramel Pineapple Bread Pudding

• 1 pound french bread loaf (the soft crust kind not a baguette)
• 8 large eggs
• 3 cups milk
• 1 cup sugar
• 1 tablespoon vanilla
• 1 teaspoon cinnamon
• a lot of fresh grated nutmeg
• a pineapple
• 1/2 cup butter (plus a bit more for the pan)
• 1 cup brown sugar
• 1/2 teaspoon salt
• 1/4 cup corn syrup
• 2 tablespoons heavy cream
• 2 tablespoons amber rum (I highly recommend Mt Gay Eclipse)
