  • 12 bone-in chicken thighs
  • 1 lime, juiced
  • 2 tbsp rapeseed, sunflower or vegetable oil
  • 3 lemongrass stalks, bruised and tied together
  • 6 lime leaves, torn

  • 1cm piece of galangal, peeled
