- For the dough
- 1 3/4 all-purpose flour
- 3 tablespoons masa harina
- 1/2 teaspoon sea salt
- 1/4 pound cold unsalted butter (1 stick), cubed
- 1 egg, lightly beaten
- 3 - 4 tablespoons ice water
- 1 teaspoon distilled white vinegar
- For the filling and topping
- 1/4 cup pepitas (pumpkin seeds), shelled
- 1 1/2 tablespoons white sesame seeds
- 1/2 teaspoon cumin seeds
- 1 teaspoon canola oil
- 2 medium-sized tomatillos, halved
- 1 jalapeno pepper
- 1 serrano pepper, seeded (if you like it spicy, you can leave the seeds)
- 1 small shallot, peeled and halved
- 2 garlic cloves, peeled and smashed
- 1/2 cup cilantro leaves
- 2 teaspoons fresh oregano, roughly chopped
- 1/4 cup chicken broth or stock
- Zest of one lime
- 1/2 teaspoon sea salt
- 1 1/2 cups shredded cooked turkey, or rotisserie chicken
- 1 egg
