Ingredients
- 3 1/2 ounces (100 grams) fine bread crumbs
- 2 tablespoons (20 grams) butter
- 1/2 cup (40 grams) Parmesan cheese, grated (plus more for serving)
- 2 eggs
- Freshly grated nutmeg or lemon zest, if desired
- 2 quarts (2 litres) chicken stock (homemade is best)
