- 1-1/2 cup part-skim shredded mozzarella, divided
- 1/4 cup parmesan
- 4 cup fresh spinach
- 1 tbsp olive oil
- 1/2 cup red wine
- 3 x cloves garlic, minced
- 1 x onion, chopped
- 2 x bell peppers, sliced
- 3 x portobello mushroom caps, sliced
- 1 can diced tomatoes
- 1 small jar of sliced olives
