Ingredients
- Poached Dried Mission Figs
- 1 pound Dried Mission Figs
- 2 cups Ruby Port
- 2 tablespoons Balsamic Vinegar
- 1/2 cup Brown Sugar
- 2 Strips of Orange Peel
- 1 Vanilla Bean, Split and Scrapped
- 1 Cinnamon Stick
- 12 Grinds of Fresh Pepper
- Vanilla Creme Brulee
- 1 quart Heavy Cream
- 1/2 cup Granulated Sugar
- 1 Vanilla Bean, Split and Scraped
- 6 Egg Yolks
- 1/4 cup plus 2 tsp of Raw Sugar
- Hot Water for Water Bath
