- 3 tablespoons olive or vegetable oil
- 1 large white onion, sliced 1/4-inch thick

- 1 teaspoon olive or coconut oil*
- 1 shallot (or 1/2 small red onion), finely chopped
- 3/4 cup long grain rice
- 1 teaspoon ground cumin
- 2 teaspoons red chile powder*
- 1 1/2 cups vegetable stock or water
- 1 15 ounce can black beans, rinsed and drained
- 1 teaspoon salt

- 4 eggs, cooked any style (we like poached and runny)
