Grapefruit tart with bittersweet chocolate and hazelnut cream
Ingredients
- For the tart crust (one 9" tart)
- 1 cup all-purpose flour
- 1/2 cup hazelnuts, toasted and finely ground (see instructions below)
- 1/2 cup powdered sugar
- 1/4 teaspoon kosher salt
- 1 teaspoon grapefruit zest, finely grated
- 8 tablespoons (1 stick) unsalted butter, very cold, cut into small pieces
- 1 large egg yolk
- For the tart filling (chocolate layer, hazelnut cream, grapefruit rounds and glaze)
- 3 ounces bittersweet chocolate, chopped into small pieces
- 6 tablespoons unsalted butter, softened
- 2 tablespoons granulated sugar
- 3/4 cup hazelnuts, toasted and finely ground (see instructions below)
- 2/3 cup powdered sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon grapefruit zest, finely grated
- 1 large egg
- 1 teaspoon vanilla
- 2 medium ruby-red grapefruit, pith removed and cut into rounds, ¼ inch thick
- 1/4 cup citrus marmalade
