- 2 pounds ground turkey (I used 1 pound of 6% fat and 1 pound 1% fat)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- pinch of salt
- 1 medium zucchini, grated
- 1½ tablespoons capers, chopped
- ½ cup sun-dried tomatoes, chopped
- 2 slices whole wheat bread (you can also use white bread)
- ½ cup parsley
- 1 egg
- 1 large clove garlic, finely chopped
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon worcestershire sauce
- ½ cup shredded or grated parmesan cheese
- 2 tablespoons finely chopped fresh mint
