Corn and Basil Muffins
Ingredients
- 1 cup Flour
- 1 cup Cornmeal
- 1 tablespoon Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 tablespoon Oil
- 200 milliliters Coconut Milk, well shaken (1/2 of a 13.5 ounce can)
- 4 tablespoons Unsalted Butter, melted and cooled
- 1 Egg
- 1 cup Corn, fresh or frozen (thawed, and drained)
- 1/2 cup Basil, about a fist full, cut into ribbons or diced
