- 200g piece Spanish salami
- 1/2 teaspoon extra virgin olive oil
- 1 red onion, halved, cut into thin wedges
- 2 garlic cloves, crushed
- 1 teaspoon smoked paprika
- 800g can crushed tomatoes
- 2 tablespoons tomato paste
- 400g can butter beans, drained, rinsed
- 1/2 cup frozen peas
- 1/2 x 260g jar chargrilled capsicum, drained
- 4 eggs
- 2 tablespoons chopped fresh flat-leaf parsley leaves
- Chargrilled crusty bread, to serve
