petite lemon cakes
Ingredients
- For the Cakes
- 1/2 pound unsalted butter
- 2 1/2 cups granulated sugar
- 4 eggs
- 4 lemons, zested and juiced
- 2 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking soda
- 1 teaspoon teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup milk (I like some fat in mine...but you can go nonfat if you'd like)
- 1 tablespoon white vinegar
- 1 1/2 teaspoons vanilla extract
- For the Glaze
- 2 cups powdered sugar, plus more for dusting the cakes
- 1/2 lemon, zested and juiced
- 1 tablespoon cream
