Strawberry Rhubarb Streusel Muffins Recipe
Ingredients

- 2 cups diced rhubab (from about 2 stalks)
- 1 cup (7 ounces) sugar
- 2 cups (10 ounces) all purpose flour
- 1/2 cup packed light brown sugar
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1 1/2 cups milk
- 4 eggs, lightly beaten
- 16 tablespoons (2 sticks) unsalted butter, melted and cooled
- 2 teaspoons vanilla extract
- 1 1/2 cups chopped strawberries
- For the Topping:
- 10 tablespoons cold unsalted butter, diced
- 1 cup light brown sugar
- 1 cup (5 ounces) flour
