- 2 large yukon Gold or sweet potatoes, unpeeled and cut into thirds
- juice of 2 lemons
- 1/3 cup extra virgin olive oil
- 4 cloves garlic, minced
- 1 teaspoon ground rosemary
- salt
- ground black pepper
- 4 boneless, skinless chicken breast halves, cut into 1" pieces
- 1 pint cherry tomatoes
- 20 bamboo skewers, each 8" long, soaked in water for 30 minutes and drained
