- 1 pound ground lamb

- 5 regular jalapeños or 3 Thai chiles if you like spicy, diced
- 3 to 4 cloves garlic, finely chopped
- 1 bunch fresh cilantro, chopped
- 1 small piece ginger, finely chopped
- 1 teaspoon paprika oleoresin
- 1 egg
- 2 tablespoons vinegar
- Pinch salt, or more to taste
- 5 jalapeños
- 1 bunch fresh cilantro
