Coq au Vin
Ingredients
- 4 tablespoons butter, divided
- 2-3 pieces of bacon
- 3 garlic cloves, pressed
- 1 large onion, chopped
- 1 large carrot, chopped
- 1-2 pounds chicken, cut into small bite-sized pieces
- 3 tablespoons tomato paste
- 1 bottle red wine (traditionally Burgundy or Côtes du Rhône, but it's more important to use something you like)
- 2 cups beef broth (Better than Bouillon is fantastic here)
- 1 tablespoon thyme
- 1 bay leaf
- salt + pepper
- 3 tablespoons flour
