Ingredients
- 1/2 cup Late Harvest Riesling
- 1 medium onion, coarsely chopped
- 1 head of garlic—1 small clove minced, the rest coarsely chopped
- 4 thyme sprigs
- 6 tablespoons extra-virgin olive oil
- 4 chicken breast halves, on the bone with wings attached
- 1 tablespoon balsamic vinegar
- 2 teaspoons red wine vinegar
- 1/2 tablespoon finely chopped basil
- 3/4 teaspoon Dijon mustard
- Salt and freshly ground pepper
- 1 large red onion, cut lengthwise through the core into 8 wedges
- One 1 1/2-pound butternut squash—halved lengthwise, seeded and cut into 16 wedges
- 1 large apple—halved, cored and cut into 8 wedges
- 4 slices of bacon, halved crosswise
