- 4 ounces (1 stick) unsalted butter
- 4 ounces (about 1/2 cup) heavy cream
- 2 tablespoons creme fraiche
- Pinch of salt
- For the chocolate glaze
- 4 ounces (about 1/2 cup) heavy cream
- 4 ounces dark chocolate, chopped into small pieces
- Pinch of sea salt, for the top
