- 3 tbsp Unsalted Butter
- 4 x Shallots large, minced (about 1/2 cup)
- 1 tbsp Tomato Paste
- 1 pinch ground allspice
- 2 tbsp all-purpose flour
- 1 3/4 cup Chicken Stock, homemade or canned low-sodium
- 1/4 cup Heavy Cream
- Salt and cayenne pepper to taste
