Algerian Beef Potato Olive Tagine
Ingredients
- 4 pieces beef, medium in size, preferably from the shank
- 2 large potatoes, quartered
- 1/2 cup mixed green and kalamata olives, pitted
- 1 onion, grated
- 2 garlic cloves, crushed
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 cinnamon stick
- 1 bay leaf
- salt and pepper, to taste
