Mango Halibut Ceviche
Ingredients
- 3/4 pound fresh halibut, cut in 1/2 inch dice (I used halibut cheeks)
- 3/4 cup lime juice (about 4 limes)
- 2 cups mangoes, diced
- 10 ounces cherry tomatoes, sliced in half
- 1 orange bell pepper, finely diced
- 1 avocado, diced
- 1/2 cup Italian parsley, finely chopped
- 1 serrano chili pepper, finely diced
- 1 teaspoon salt
- Tortilla chips for serving
