- Chives, or twigs of thyme, for garnish
- A pat of butter
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 red onions, thinly sliced
- 1 sweet yellow onion, thinly sliced
- 1/2 tablespoon sugar
- Salt and pepper
- 1/4 cup cognac
- 1/2 cup dry white wine
- 1 cup beef stock
- 1 bay leaf
- The leaves of 4 sprigs thyme
