Ingredients
- Ginger Creme Fraiche:
- 1/2 cup creme fraiche
- 1 teaspoon freshly grated ginger
- Soup:
- 1 tablespoon extra virgin olive oil
- 1 tablespoon minced garlic
- 1 1/2 cups diced onion (from about 3/4 large onion)
- 1/2 teaspoon cumin
- 1/8 teaspoon cayenne pepper
- -- Pinch cinnamon
- -- Kosher salt and ground black pepper, to taste
- 2 teaspoons freshly grated ginger
- 2 pounds butternut or other winter squash (about 4 cups)
- 1 pound sweet potato, peeled and diced (about 2 cups)
- 3 1/2 cups chicken broth (or substitute vegetable broth for a vegetarian soup)
