- 1 Cubanelle pepper, seeded and chopped
- 3 cloves garlic, minced
- 3 (16-ounce) cans black-eyed peas, drained and rinsed
- 1 pint heavy cream
- 4 ounces cream cheese, cut into 6 pieces
- 4 scallions, chopped
- 1/4 cup fresh cilantro, chopped
- 1 1/2 cups Monterey Jack cheese, shredded
