Roasted Garlic Cauliflower and Red Lentil Soup
Ingredients
- 2 heads of garlic
- 1 pound cauliflower (about half of a large head)
- 2 tablespoons olive oil, plus more for drizzling
- 1 large yellow onion, chopped
- 1 medium apple (any variety), peeled, cored, and chopped
- 2/3 cup red lentils, rinsed and picked over for stones
- 2 teaspoons ground cumin
- 1/4 teaspoon turmeric
- Pinch of crushed red chili flakes
- 6 cups water
- 1 bay leaf
- Salt and freshly ground black pepper to taste
