- 1 tablespoon sugar
- 2 teaspoons baking powder
- Zest and juice from 1 Cara Cara orange
- 1 egg
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 teaspoon butter
- 1 teaspoon vegetable oil
- For the cannoli cream:
- 1 cup part skim ricotta cheese
- 2 tablespoons sugar
- 1 teaspoon vanilla
- 1/3 cup mini chocolate chips
- 1/2 teaspoon Cara Cara orange zest
- Butter and vegetable oil, for frying
