- 3/4 cup long grain white rice
- 8 ounces uncooked medium shrimp, peeled with tails on
- 6-8 ounces boneless skinless chicken breast, rubbed with garlic powder
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 white onion, chopped in 1/2" pieces
- 2 stalks celery, chopped in 1/2" pieces
- 1/2 large red Bell pepper, chopped in 1/2" pieces
- 1/2 large green Bell pepper, chopped in 1/2" pieces
- 1 green jalapeno pepper, seeded and chopped medium
- 3 large cloves garlic, sliced thin
- 1/2 teaspoon thyme
- 2 bay leaves
- 1-2 pinches red pepper flakes
- 2-3 cups low salt chicken broth
- Salt, fresh ground black pepper to taste
- Tabasco sauce for the table
- Parsley, chopped and whole sprigs for garnish
