Ingredients
- 1 1/2 each pounds zucchini and yellow summer squash (for a total of 3 pounds of squashes. This should yield about 7 to 8 cups of grated squash.)
- 2 medium red bell peppers
- 2 1/2 cups finely chopped yellow onions
- 3 tablespoons kosher salt
- 2 cups medium or light amber maple syrup
- 1 1/2 cups cider vinegar
- 3/4 teaspoon turmeric powder
- 1 teaspoon ground mustard
- 1/2 teaspoon fennel seeds, lightly crushed
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon nutmeg
- 1 tablespoon cornstarch
