Ingredients
- For the dough:
- 1/4 cup almonds, whole or slivered
- 2 1/4 cups all-purpose flour, plus more for shaping
- 1 pinch salt
- 2 sticks unsalted butter, cold and chopped into little pieces
- 1/4 to 1/3 cups ice water
- For the filling:
- All-purpose flour, for rolling
- 5 tablespoons unsalted butter, softened
- 1/3 cup dark brown sugar
- 2 eggs
- 1 cup whole almonds, finely ground in a food processor
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- 1 tablespoon Calvados (apple brandy)
- 2 to 3 apples, a tart variety like Mac or Granny Smith
- 1/4 cup apricot jam
