Fiesta Guacamole
Ingredients
- * 3 tablespoon red onion, chopped
- * 1 jalapeno, seeded and chopped
- * 2 lime
- * 3 avocado, chopped
- * 1/4 cup cottage cheese
- * 2 ear of corn, cooked (about 3-4 min in boiling water) and rinsed
- with cold water to cool quicker (about 1 1/2 cup)
- * 1 red pepper, minced
- * 3 tablespoon cilantro, chopped
- * salt to taste
