- 4 ounces thick-cut bacon, cut into roughly 1-inch slices
- 1/2 cup Puerto Rican Sofrito (Recaíto), recipe follows
- 2 cups extra-long-grain rice, such as Carolina, rinsed and drained
- One 15.5-ounce can black beans with liquid
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1 dried bay leaf
- Kosher salt and freshly ground black pepper
- 2 medium yellow onions, peeled and coarsely chopped
- 2 cups (about 4 1/2 ounces) ajicitos (sweet peppers), stemmed, halved and seeded
- 2 large green bell peppers, stemmed, seeded and coarsely chopped
- 1/2 cup (about 16) garlic cloves, peeled
- 1 bunch (about 4 ounces) cilantro (including stems), coarsely chopped
- 1 bunch (about 2 ounces) culantro leaves (recao), coarsely chopped
