- 2 cups cooked or canned chickpeas, liquid reserved
- 2 1/2 cups raw spinach, packed
- 1 1/2 heads roasted garlic (** or 2 cloves garlic, minced)
- 1/2 cup tahini
- 1/4 cup olive oil + a little more to thin, if needed
- 1 tablespoon ground cumin, paprika, or sumac, or to taste, plus a sprinkling for garnish
- salt & pepper, to taste
- juice of 1 lemon, plus more as needed
