- 1/4 cup olive oil
- 1/4 cup sherry vinegar
- 1 teaspoon whole cumin seed
- 1/4 teaspoon whole celery seed
- 1/4 teaspoon ground black pepper (plus a bit more)
- 1 teaspoon fresh thyme
- kosher salt
- 1/2 cup chopped celery leaves
