- 2 tablespoons neutral oil , such as grapeseed or canola
- 1 1/4 pounds ground beef (80/20)
- 1 1/2 teaspoons kosher salt
- 1 medium yellow onion , diced (about 2 cups)
- 2 stalks celery , chopped (about 1/2 cup)
- 1 medium jalapeño , seeds removed and finely chopped (about 2 tablespoons )
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 6 cups water
- 1 ( 15 - ounce ) can tomato sauce
- 2 ( 15 - ounce ) cans diced tomatoes , not drained
- 1 ( 10 - ounce ) can diced tomatoes and green chilis , such as Ro-Tel, not drained
- 2 ( 15 - ounce ) cans red kidney beans , drained and rinsed
- 1 ( 15 - ounce ) can pinto beans , drained and rinsed
- 1 ( 15 - ounce ) can Great Northern or cannellini beans , drained and rinsed
- 1 tablespoon granulated sugar
- Crumbled saltines and hot sauce, such as Tabasco, for serving
